Polyphenols are naturally occurring compounds found in olives. In extra virgin olive oil, they influence flavour, freshness and structure. Oils richer in polyphenols tend to show greener aromas, natural bitterness and a peppery finish — characteristics recognised as positive attributes in high-quality EVOO. These compounds are typically higher in early-harvest oils, where olives are picked while still green and pressed quickly.
The Official EU Health Claim on Olive Oil Polyphenols
Under authorised EU and retained UK regulation, the following wording may be used:
“Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.”
The beneficial effect is obtained with a daily intake of 20g of olive oil, provided the oil contains at least 5 mg of hydroxytyrosol and its derivatives per 20g.
Polyphenol content varies significantly depending on harvest timing, olive variety and production methods. Not all extra virgin olive oils contain the same levels.
What Is Considered High Polyphenol?
In the UK market, many standard supermarket olive oils contain around 100–200 mg/kg of polyphenols. Oils above 250 mg/kg are generally considered high, while early-harvest, small-batch oils can range from 400 mg/kg to 1000 mg/kg or more.
