Extra virgin olive oil is the highest grade of virgin olive oil. It is obtained directly from olives using mechanical processes, without the chemical refining used to produce refined olive oils.

This minimal processing helps preserve its distinctive flavour, aroma and naturally occurring compounds.

A quality EVOO can taste fruity, grassy or herbaceous, often with a slightly bitter or peppery finish. That pepperiness isn't necessarily a flaw — it is characteristic of many fresh, polyphenol-rich olive oils.

1. Naturally Rich in Unsaturated Fats

Olive oil is particularly rich in oleic acid, a monounsaturated fatty acid.

Replacing saturated fats in the diet with unsaturated fats contributes to the maintenance of normal blood cholesterol levels.

Using EVOO for dressings, cooking and finishing dishes is an easy way to make it part of your everyday diet.

Polyphenols are naturally occurring plant compounds found in extra virgin olive oil.

Harvest timing alone doesn't guarantee quality. The condition of the fruit, how quickly it reaches the mill, extraction and storage all matter too.

Extra virgin olive oil is produced mechanically rather than chemically refined.

But terms such as cold extracted don't tell the whole story. How the olives are grown, handled, milled and stored all contribute to the quality of the oil that eventually reaches your table.

Harvest date — Olive oil doesn't improve with age, so knowing the harvest helps you understand its freshness.

Extraction — Look for mechanically produced extra virgin olive oil.

Acidity — Where provided, laboratory-tested free acidity can give you useful information about the oil.

Polyphenols — If polyphenol content matters to you, look for a tested measurement rather than a marketing claim.

Storage — Quality olive oil should be protected from excessive light, heat and oxygen.
