About the Olive Oil

What makes Purely Sourced olive oil different from other olive oils?
Purely Sourced olive oil is early-harvest, single-origin Greek extra virgin olive oil produced in small batches. It is made from 100% hand-harvested Koroneiki olives and cold-extracted in eco-certified mills shortly after picking to preserve freshness and natural polyphenols.

Many supermarket oils prioritise volume and later harvest timing. Early harvest and small-batch production typically result in higher polyphenol levels, lower acidity and more structured flavour.

Are your oils organic?
Our producers follow EU organic farming standards, using traditional practices and avoiding synthetic fertilisers and chemical pesticides.
However, this product is not certified organic in the UK, so it is not marketed or labelled as organic for the UK market.

Are all extra virgin olive oils the same?

No. “Extra virgin” is a legal category, but quality varies significantly depending on harvest timing, polyphenol content, acidity level and production method.

Why is early harvest important?
Early harvest olive oil is made from olives picked before full ripeness, usually while still green. Early harvesting typically results in higher natural polyphenol levels, lower yield and more pronounced flavour.

Are your oils cold-pressed?
Yes. Our extra virgin olive oils are cold-extracted using only mechanical methods, with no heat or chemicals involved. After harvest, the olives are processed in an eco-certified mill and bottled to preserve freshness.

What is a polyphenol?
Polyphenols are naturally occurring compounds in extra virgin olive oil. They contribute to bitterness, pepperiness and overall freshness. Polyphenol levels vary depending on olive variety, harvest timing and processing method.

In the UK market, many supermarket oils contain around 100–200 mg/kg. Oils above 250 mg/kg are generally considered high, while early-harvest oils can exceed 400–800 mg/kg.

What is the polyphenol content of your olive oils?
Our Estate Selection contains 250+ mg/kg of polyphenols and offers balance and versatility for everyday use.

Our High Phenolic Reserve contains 800+ mg/kg of polyphenols and is crafted for greater intensity, best enjoyed raw or as a finishing oil.

Independent laboratory analysis is available on each product page

What is the EU health claim for olive oil polyphenols?

Under authorised EU and retained UK regulation:

Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.”

The beneficial effect is obtained with a daily intake of 20g of olive oil (approximately 2 teaspoons), provided the oil contains at least 5 mg of hydroxytyrosol and its derivatives per 20g.

What does olive oil acidity mean?

Acidity is a laboratory measure of free fatty acids. To qualify as extra virgin, olive oil must have acidity below 0.8%.

Lower acidity (for example below 0.2%) often reflects fresher olives and faster processing. It does not refer to sourness in taste.

Is 0.2% acidity better than 0.8%?

Both fall within the extra virgin category. However, lower acidity usually indicates greater production care and freshness. When tasted side by side, lower-acidity oils often feel cleaner and more vibrant.

Does olive oil colour indicate quality?

No. Green oil is not necessarily better than yellow oil. Colour varies naturally by olive variety and harvest timing. Professional tastings are conducted in blue glasses to avoid colour bias.

Can I cook with olive oil?
Yes. Extra virgin olive oil is suitable for everyday cooking, including sautéing and roasting. Many customers use a balanced oil for cooking and reserve higher-polyphenol oils for drizzling and finishing.

How long does your olive oil stay fresh?
Freshness matters with all olive oils. The best before date indicates the period during which the oil is expected to retain its optimal freshness and flavour, usually 18–24 months from bottling.
Over time, flavour intensity and polyphenol levels naturally soften. For best enjoyment, use olive oil within a few months of opening. Older oil remains suitable for cooking, while fresher oil is best reserved for drizzling and finishing.
